Frugal Recipes~ Few ingredients necessary

Tortilla's

3 cups flour
1 tsp salt
1/4 cup shortening or lard
1 cup lukewarm water

Mix flour and salt in bowl then cut in shortening until the clumps are peas size.  Add water. Mix well.  Knead 15 times. Let rest 20 minutes.  Divide into 12 even sections then roll out very thin. May heat in warm skillet for burritos and such or deep fried to make a Mexican pizza shell.  You may also dip these in a cinnamon/sugar mixture after deep frying for a oh-so-yummy dessert.

The warmed shells can be filled with anything.  We've made p-nut butter roll ups out of them, filled them with scrambles eggs and ketchup for breakfast, and used them as hot dog buns.  They're extremely versatile.



Mush

3 cups water
1 tsp. salt
1 cup cornmeal
1 Tablespoon butter

Heat water to boiling.  Reduce heat to medium, then add salt and cornmeal.  Cook stirring frequently until thick.  Place in lightly greased 9x5 bread pan.  Cover and refrigerator overnight. The next day, melt butter in pan over medium high heat and slice the cornmeal mixture into 1-inch slices.  Cook slices in melted butter until lightly browned.



Gruel (Cornmeal Porridge)

1/2 Cornmeal
2 1/2 cups water, divided
Sugar and milk, to taste

Add cornmeal to bowl add 1/2 cup of hot water to it then let it soak. Add 2 cups of water to a sauce pan. Cover and bring to a boil. Pour in soaked cornmeal, whisk well to avoid lumps and lower heat to simmer.  Cook 15-20 minutes covered. Serve with sugar and milk.


Hoe Cakes

2 cups cornmeal
1 tsp salt
2 cups boiling water

Mix cornmeal and salt.  Add boiling water, whisk very well to avoid lumps.   Heat some oil over medium high.  Pour 1/4 cup batter into pan. Fry on both sides until lightly browned.


Homemade Rice-a-roni

2 cups uncooked rice
1 cup of spaghetti, snapped very small
1/4 cup parsley (optional)
6 Tablespoons beef or chicken flavoring
2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp thyme

Mix well.  May keep in airtight container.  To use mix 1 cup mix with 2 cups water and 1 TBS butter. Bring to boil, cover and reduce heat.  Simmer 15 minutes until rice is tender.
